Job Description

Introduction
Located at Morningside, we operate 7 days a week with our banner encompassing our full service dine in restaurant - The Fish Factory Kitchen and Bistro & The Sushi Factory.
The Fish Factory is excited to announce a job opportunity for a Head Chef to join our team! Reporting to the General Manager - Retail, and working alongside a Sous Chef, you will have extensive experience in a commercial kitchen, being able to lead a team of cooks and take control of kitchen operations. Being a natural leader, you will build relationships and work autonomously, motivating team through constant coaching and mentoring. You will help manage the kitchen and take control of the menu, ordering, rostering and general kitchen efficiency.

Your role
Working a full-time roster over five days, including weekends; fulfilling 40 hours per week, this role will see you anchor the operations of our kitchen. With genuine growth opportunities, this role will put you in the heart of our kitchen operation, managing and taking lead from the front. The role is best suited to someone that thrives in a fast-paced, vibrant and diverse team environment. You will manage and oversee food preparation. The successful candidate will have a keen eye for growth and expansion, bringing fresh ideas and execution into a team seeking growth. Main areas of responsibility are as below
• Manage inventory & food costs including menu planning
• Managing, recording & reporting discrepancies.
• Managing daily stocktake, ordering and rotation of stock.
• Take control of rosters and wage costings
• Train, lead and mentor kitchen staff (demonstrate, discuss cooking processes with junior staff)
• Ensure consistency in food quality, taste, and presentation through regular kitchen quality checks and service shifts.
• Oversee, and participate daily food preparation and plating of orders during service.
• Oversee kitchen hygiene, cleaning and maintenance of cooking and food preparation areas.
• Setup or shutdown of kitchen.
• General kitchen duties where required.

Experience & qualifications
1. 3 years commercial kitchen experience
2. Formal qualifications in commercial cookery

Salary: $75,000 to $80,000 per year, based on experience of the candidate
