Position Overview: Mygration is engaged to source the following position for our client
Sydney’s live-fire fine-dining star needs an multiskilled all-rounder Commis Chef. You’ll work the grill that anchors a menu of dry-aged beef, line-caught fish and seasonal produce, mastering primal heat and polished technique. Bring knife-sharp detail, stamina and an obsession for flawless plates.
Key Duties & Responsibilities
Your role involves providing flawless support to the Chef de Partie and Senior Chefs in all aspects of station preparation, mise en place, cooking, and plating, ensuring the seamless execution of our refined menu to the highest possible standards, consistently and efficiently.
• Prep & Mise en Place
o Execute all prep—knife cuts, garnishes, oils, butters, stocks, brines—fast, exact.
o Fabricate seafood & premium meats; blanch, glaze, cook veg/starches to spec.
o Label, date, FIFO; stations stocked, immaculate.
• Service Support
o Work assigned section; blanch, sear, poach, fry, sauce, plate—speed & precision.
o Log fridge, bath, core temps; finish sauces, emulsions; plate per chef’s diagram.
• Cleanliness & Maintenance
o Clean-as-you-go, scrub surfaces, gear, floors, fridges daily.
o Care for knives, pans, machines; report faults. Separate waste; enforce FIFO.
• Quality & Learning
o Judges produce freshness; taste, season, adjust under guidance.
o Follow recipes/plating exactly; take notes, ask, observe.
• Teamwork
o Clear calls and Anticipate needs, stay calm, support peers.

Qualifications & Skills Required
• Certificate III in Commercial Cookery (or equivalent international qualification) is mandatory.
• Understanding of Fine Dining
• Strong physical & mental stamina
• Meticulous Attention to Detail and Proven Knife Skills
• Ability to work quickly and accurately without compromising quality
• Cleanliness & Hygiene and an unwavering commitment to kitchen sanitation (HACCP principles)
• Reliability, Punctuality and Team Player
• Excellent Communication skills with ability to follow complex instructions precisely
• At least 1+ years in fine dining mains/hot sections (fine dining establishments).
