Blackwattle Deli, nestled in Sydney Fish Market, Pyrmont, distinguishes itself as a culinary haven offering premier quality charcuterie products. We pride ourselves on meticulously sourcing a diverse selection of both international and local artisanal charcuterie delights, ranging from the luxurious Jamon Iberico de Cebo to the exquisite Larnaudie duck Foie Gras. Beyond charcuterie, we complement the experience with a variety of cheeses, dry goods and pantry essentials, offering our customers the tools to enhance their culinary creations.

We are seeking a passionate and skilled Smallgoods Maker to join our team.

Key Responsibilities:
• Carefully select high-quality meats from various suppliers, ensuring they meet Blackwattle Deli’s standards for freshness and flavour.
• Use knives and cutting tools to debone and portion meats according to customer preferences and recipe requirements.
• Trim excess fat and ensure the visual appeal of the cuts.
• Operate meat processing machines and equipment, such as slicers, grinders and smokers, ensuring proper maintenance and adherence to safety protocols.
• Mince and grind meat according to specific size and texture requirements.
• Contribute to the refinement of the charcuterie menu, experimenting with various marinades, seasonings and curing methods to achieve unique and flavourful results.
• Mix spices, salt and other ingredients in precise quantities to create well-balanced and flavourful seasoning blends for different charcuterie items.
• Provide information and advice to customers regarding the selection, suitability and uses of various cuts of meat.
• Actively seek ways to improve efficiency in meat preparation processes, exploring new techniques or equipment that could enhance productivity and product quality.

Requirements:
• At least 2 years of work experience as a Smallgoods Maker or similar role
• In-depth knowledge of meat preparation and seasoning techniques
• Proficiency in operating meat processing equipment and machinery
• Strong attention to detail and commitment to quality control
• Ability to work in a collaborative team environment
• Knowledge of food safety regulations and hygiene practices

Salary Offer: $70,000-$80,000
