Job Description
Position: Chef
Salary: $73,000 to 90,000 plus 11.5% Super
Hours: 38 hours
Mode: Full-Time
Location: 425-427 Little Collins Street, Melbourne VIC 3000
Experience Required: Minimum 2 years’ experience in relevant role
Located in the heart of Melbourne CBD and spread over two floors, The Irish Times Pub offers a warm, relaxed, and friendly atmosphere. The ambience – genuine Irish style wrap-around bars, traditional dark wood interiors, cosy fireplaces, beautiful stained-glass windows, and rugby memorabilia’s, is reminiscent of classic pubs in Ireland.
Responsibilities:
• Planning and organising the preparation and cooking of food in accordance with menu requirements and food quality standards.
• Preparing, seasoning, and cooking a wide variety of menu items, including entrees and main courses, using various cooking methods and commercial kitchen equipment such as ovens, grills, flat-top grills, and microwaves.
• Supervising and coordinating the activities of kitchen staff, including allocating duties, preparing work rosters, and contributing to the scheduling of shifts and remuneration discussions in collaboration with the Head Chef.
• Monitoring and managing inventory by performing weekly stocktakes, ordering supplies, and ensuring correct receipt and storage of stock in compliance with food safety and hygiene regulations.
• Ensuring all food preparation areas, cooking surfaces, utensils, and equipment meet established hygiene and safety standards at all times.
• Overseeing mise en place activities such as chopping vegetables, portioning meat, and preparing ingredients in advance of service hours to ensure smooth kitchen operations.
• Assisting the Head Chef in maintaining food quality standards, contributing to menu planning, and implementing cost-control measures.
• Performing additional culinary or supervisory tasks as directed by the Head Chef to support overall kitchen performance and service delivery.
To be successful in this role, it is essential you have:
• A Certificate III in Commercial Cookery or an equivalent qualification, with a strong foundation in culinary techniques and food preparation.
• Proven creativity and passion for food, with a commitment to delivering consistently high standards in both presentation and taste.
• The ability to work effectively under pressure in a fast-paced kitchen environment while maintaining attention to detail.
• A strong understanding of and commitment to Occupational Health & Safety (OH&S) and Food Safety standards, ensuring full compliance at all times.
• High standards of personal presentation and dedication to maintaining a clean and hygienic kitchen environment.
• Flexibility in availability, including willingness to work across 7 days, covering morning and evening shifts, weekends, split shifts, and public holidays as required.
