The Rasoi Tandoori Indian Kitchen – Mount Martha is seeking an experienced and enthusiastic Chef to lead kitchen operations in our busy and vibrant restaurant. Located in the beautiful seaside town of Mount Martha on the Mornington Peninsula, we are well known for serving authentic Indian cuisine using traditional techniques and fresh ingredients.
Operating seven days a week, our restaurant offers both dine-in and takeaway services, catering to a diverse and loyal customer base. With a menu full of rich, flavourful Indian dishes, we are committed to delivering high-quality meals and warm hospitality in a fast-paced yet welcoming environment.
This is an excellent opportunity for a qualified and passionate professional with solid experience in Indian cuisine and strong leadership skills to join a dedicated culinary team in a thriving hospitality business.
Key Responsibilities:
• Plan, prepare, and cook a variety of Indian dishes including curries, tandoori items, breads, rice dishes, entrees, and desserts to restaurant standards.
• Oversee daily kitchen operations, ensuring food preparation areas are clean, hygienic, and well-organised at all times.
• Develop and update menus based on seasonality, customer preferences, and business strategy while maintaining food cost efficiency.
• Supervise and lead kitchen staff, delegating tasks, maintaining staff rosters, and ensuring all team members meet performance and hygiene standards.
• Ensure consistency in taste, presentation, and portion control for every dish served.
• Maintain inventory control, monitor stock levels, and liaise with suppliers to order fresh produce and ingredients as required.
• Conduct regular quality checks of incoming stock and prepared dishes to ensure freshness and compliance with food safety standards.
• Train, mentor, and motivate junior staff and cooks, helping them develop their culinary skills and ensuring smooth kitchen operations.
• Monitor food wastage and implement waste reduction practices.
• Enforce food safety standards and comply with OH&S regulations, maintaining detailed records and ensuring the kitchen passes all inspections.
• Liaise with front-of-house staff to ensure smooth coordination between kitchen and service teams, especially during busy service periods.
• Manage kitchen documentation, including daily prep sheets, cleaning schedules, incident logs, and temperature records.
• Participate in recruitment, induction, and performance reviews for kitchen staff where required.
• Take initiative to introduce new ideas and techniques to improve the kitchen’s workflow and customer satisfaction.
To be successful in this role, it is essential you have:
• Certificate IV in Commercial Cookery or equivalent qualification.
• Minimum of 2 years’ experience in a similar role within high-end or luxury dining establishments.
• Strong leadership and team management skills.
• Excellent knowledge of Indian spices, ingredients, and traditional cooking techniques
• Ability to work in a fast-paced, high-pressure kitchen
• Understanding of HACCP, OH&S, and general compliance standards
• Flexibility to work evenings, weekends, and public holidays as needed
• A strong eye for detail, creativity, and a passion for food.
